Black Bean + Sweet Potato Burgers

Ingredients:

1 13 oz. Can Black Beans (drained + rinsed)

1 Medium Sweet Potato (skin removed + cooked: should yield about 1 packed c.)

½ c. Quick cooking oats

1-2 Chipotle peppers in adobo (minced)

½ Small sweet onion (finely diced)

½ tsp. Cumin

1 tsp. Onion powder

1 tsp. Garlic powder

1 tsp. Salt

¼ c. Farmer Foodie Golden Chedda Cashew Parm


Method:

  1. Combine all ingredients into a large mixing bowl. 
  2. Using a wooden spoon or a potato masher, mash all of the ingredients until combined. There should be some black bean chunks remaining.
  3. Preheat the oven to 375 degrees Fahrenheit and line a baking sheet with parchment paper. 
  4. Form the mixture into 4-6 patties, depending on what size you make them. 
  5. Place on the baking sheet and bake for 18-20 minutes.
  6. Serve as-is or on a bun with aioli or mayo, lettuce, tomato, and onion.
