Golden Chedda Sweet Potato Fries

Ingredients:

1 Large sweet potato (or 2 medium-sized)

2 tbsp. Olive oil

1 tbsp. Cornstarch

Salt and pepper, to taste

3 Garlic cloves (minced)

2 tbsp. Farmer Foodie Golden Chedda Cashew Parm


Method:

  1. Line a large baking sheet (or 2) with parchment paper and preheat the oven to 425 degrees Fahrenheit.
  2. Cut the sweet potatoes into ¼-½” thick fries.
  3. Toss the cut potatoes with the olive oil and cornstarch. Toss with your hands until you can no longer see the cornstarch and the fries are completely coated. 
  4. Lay the fries evenly onto the lined baking sheet. Bake for about 10 minutes, then flip and bake for another 5-10 until mostly tender.
  5. Turn the oven to broil and broil the fries for about 3-5 minutes, tossing every minute until golden and crispy, then remove from the oven. Toss with a pinch of salt and pepper. 
  6. In a small bowl combine the fresh garlic and Golden Chedda Cashew Parm. Use your fingers to mix the two together until a crumbly texture is formed. 
  7. Sprinkle the fries with the garlic Parm mixture and enjoy!
