Ingredients:
1 Large sweet potato (or 2 medium-sized)
2 tbsp. Olive oil
1 tbsp. Cornstarch
Salt and pepper, to taste
3 Garlic cloves (minced)
2 tbsp. Farmer Foodie Golden Chedda Cashew Parm
Method:
- Line a large baking sheet (or 2) with parchment paper and preheat the oven to 425 degrees Fahrenheit.
- Cut the sweet potatoes into ¼-½” thick fries.
- Toss the cut potatoes with the olive oil and cornstarch. Toss with your hands until you can no longer see the cornstarch and the fries are completely coated.
- Lay the fries evenly onto the lined baking sheet. Bake for about 10 minutes, then flip and bake for another 5-10 until mostly tender.
- Turn the oven to broil and broil the fries for about 3-5 minutes, tossing every minute until golden and crispy, then remove from the oven. Toss with a pinch of salt and pepper.
- In a small bowl combine the fresh garlic and Golden Chedda Cashew Parm. Use your fingers to mix the two together until a crumbly texture is formed.
- Sprinkle the fries with the garlic Parm mixture and enjoy!
