2 lb. Whole carrots (peeled and halved lengthwise)
1 tbsp. Extra virgin olive oil
2 tbsp. Maple syrup
3 Medium cloves garlic (minced)
Pinch salt and pepper (to taste)
1 tbsp. Chopped pistachios (to top)
Flaky salt (to top)
- Preheat the oven to 425 degrees Fahrenheit.
- Place 2 lb. of halved carrots on a baking sheet and drizzle with 1 tbsp. of olive oil and 2 tbsp. of maple syrup. Add the minced garlic, and a pinch of salt and pepper. Toss to combine and coat the carrots.
- Roast in the preheated oven for about 15 minutes or until the carrots are tender as desired (use a fork to see how tender the carrots are). Broil on high for 2-4 minutes if desired for further browning.
- Plate the carrots and top with 2 tbsp. of Golden Chedda Cashew Parm and 1 tbsp. of chopped pistachios. Finish with a pinch of flaky salt if desired and enjoy!
