Roasted Maple Garlic Carrots


2 lb. Whole carrots (peeled and halved lengthwise)

1 tbsp. Extra virgin olive oil

2 tbsp. Maple syrup

3 Medium cloves garlic (minced)

Pinch salt and pepper (to taste)

2 tbsp. Farmer Foodie Golden Chedda Cashew Parm

1 tbsp. Chopped pistachios (to top)

Flaky salt (to top)


  1. Preheat the oven to 425 degrees Fahrenheit.
  2. Place 2 lb. of halved carrots on a baking sheet and drizzle with 1 tbsp. of olive oil and 2 tbsp. of maple syrup. Add the minced garlic, and a pinch of salt and pepper. Toss to combine and coat the carrots.
  3. Roast in the preheated oven for about 15 minutes or until the carrots are tender as desired (use a fork to see how tender the carrots are). Broil on high for 2-4 minutes if desired for further browning.
  4. Plate the carrots and top with 2 tbsp. of Golden Chedda Cashew Parm and 1 tbsp. of chopped pistachios. Finish with a pinch of flaky salt if desired and enjoy!
